After years of milling flour and hearing from thousands of happy customers, our master miller Ramesh Ji shares his top tips for making the perfect soft roti.
Use Fresh Flour
The fresher the flour, the softer the roti. Bail Chakki grinds on order, so your flour is always fresh. Use within 30 days for best results.
The Right Water Ratio
For every 2 cups of atta, use approximately 3/4 cup warm water. Add slowly and knead well for 8-10 minutes until the dough is smooth and slightly tacky.
Rest the Dough
Cover the dough and let it rest for at least 20 minutes. This allows the gluten to relax and makes rolling much easier.
The Tawa Temperature
Your tawa must be very hot before placing the roti. Medium-high heat works best. Too low = dry roti, too high = burnt spots.
Store Properly
Keep your atta in an airtight container in a cool, dry place. In summer, store in the refrigerator to maintain freshness.
